L’aperitivo e l’apericena
The drink that became a meal. What to expect, what to order, what to say.
In Italy, the hour before dinner is social time. You don’t go straight to the restaurant — you meet for un aperitivo first. In the north, especially Milan, this has evolved into the apericena: a buffet of hot and cold food served with your drink, substantial enough to replace dinner entirely.
Aperitivo vs apericena
L’aperitivo
A drink — Campari, Aperol Spritz, Negroni, Prosecco — served with small snacks: olives, nuts, chips, bruschettine. Common everywhere in Italy. The food is a gesture, not a meal.
L’apericena
A drink plus food substantial enough to replace dinner. The format varies by city and by bar: in Milan it’s often a self-service buffet; elsewhere it might be a tagliere — bread or focaccia, cheese, and cured meats — or a selection of warm stuzzichini. One price covers everything. Very common in the north, spreading fast everywhere.
The Milanese ritual
In Milan, aperitivo hour runs roughly from 6:30pm to 9pm. You pay for one drink — usually €8–12 — and food is included. In Milan this is often a large self-service buffet. In other cities it could be a tagliere of focaccia, cheese and salumi, or a few warm stuzzichini. The format depends on the bar and the region. Outside the north it is less structured, but the idea is the same: one drink, something to eat, no separate bill for the food.
Classic aperitivo drinks / Le bevande
Aperol Spritz the default
Prosecco, Aperol, a splash of soda, a slice of orange. The most ordered aperitivo in Italy. Light and slightly bitter.
Campari Spritz the original
Same format as Aperol but with Campari — more bitter, more red. Preferred by anyone who finds Aperol too sweet.
Negroni the classic
Gin, Campari, sweet vermouth. Stirred, not shaken. Invented in Florence in 1919. Strong, aromatic, unmistakably Italian.
Prosecco if you want bubbles without the bitter
Sparkling white wine from Veneto. Light, fresh, easy. Always acceptable at aperitivo. Not champagne — and Italians don’t confuse the two.
Analcolico no alcohol
Non-alcoholic aperitivo. San Bitter, Crodino, and Sanbittèr are the classic options — all bitter, all orange, all served cold with ice. Completely normal to order.
What to say / Cosa si dice
- Un Aperol Spritz, per favore. An Aperol Spritz, please.
- C’è l’apericena stasera? Is there an apericena tonight?
- È incluso il drink? Is the drink included?
- Quanto costa l’aperitivo? How much is the aperitivo?
- Qualcosa di analcolico? Something non-alcoholic? (waiter asks)
- Sì, un Crodino, grazie. Yes, a Crodino, thank you.
- Ci facciamo un aperitivo? Shall we go for an aperitivo?
- Ci vediamo per l’aperitivo alle sette. Let’s meet for aperitivo at seven.
Timing
Aperitivo happens between 6:30pm and 8:30pm. Turning up at 5pm or after 9pm and asking for an apericena buffet will get you a blank look. The ritual has its hours — and Italians keep them.
