The menu is talking to you
Every section heading on an Italian menu is using the definite article. Once you see it, you can’t unsee it.
Look at this menu
Notice the orange tags before each section heading. That’s the article.
The pattern

| i | masculine plural, consonant | i primi, i secondi, i dolci, i contorni |
| gli | masculine plural, vowel | gli antipasti, gli gnocchi, gli spaghetti |
| le | feminine plural | le bevande, le insalate, le pizze |
Singular vs plural — both are on the menu
Section headings are always plural (you’re talking about a category). Individual dishes use the singular.
I secondi → il pollo alla griglia
The mains (category) → the grilled chicken (specific dish)
Ordering: use the singular with il / la / l’
When you order a specific dish, it drops back to singular.
Prendo il risotto ai funghi.
I’ll have the mushroom risotto.
Vorrei la panna cotta.
I’d like the panna cotta.

The menu section for pasta and risotto is called: ___ Primi
The section for starters is: ___ Antipasti
Drinks on the menu: ___ Bevande
You want to order the panna cotta. You say: “Prendo ___ panna cotta.”
You order the risotto: “Vorrei ___ risotto ai funghi.”
You ask: “Quali sono ___ antipasti oggi?” (What are the starters today?)
You don’t need to memorise gender tables. Every time you read a menu, order a dish, or listen to a waiter, you’re getting repetitions. The articles will start coming out automatically. That’s how it actually works.
