Every section heading on an Italian menu is using the definite article. Once you see it, you can’t unsee it.
Notice the orange tags before each section heading. That’s the article.

Section headings are always plural (you’re talking about a category). Individual dishes use the singular.
When you order a specific dish, it drops back to singular.
